It really is the best banana bread recipe, period. You can mix everything in one bowl, you can vary the amount of sugar or bananas. And the secret to its great flavour? Oil instead of butter which is used in every other banana bread recipe.

Ingredients

  • Bananas: Try to use ripe bananas that have spots or browning on the skin. The yellow peels should be at least half browned, and the bananas inside squishy and browning. If you only have fresh bananas, a simple hack would be to put the bananas on a tray and in the oven for about 15 minutes. The heat from the oven will force the bananas to ripen quickly and make them soft and juicy for the banana bread.
  • Oil: Use any all-purpose cooking oil for a soft texture and irresistible flavour. This creates less fatty acids and makes the dough light and fluffy.
  • Sugar: You can use white or brown sugar for this recipe, both work well yet give a very different distinct taste. White sugar will make the dough light and fluffy, yet brown sugar will caramelise as it is cooked which also gives an added depth of flavour and makes the dough seem richer. For an even healthy option, you can use a sugar substitute.
  • Eggs: Eggs supply cakes, cupcakes, bread, doughs, and cookies their stability and structure, as well as a tender texture. You’ll need 2 large eggs in this banana bread recipe.

Easy and Versatile Recipe

With a very few variations, the recipe I give below is almost like every other recipe you have seen in cookbooks or been given by a family member. It’s definitely time-tested treasure with a few tweaks. It uses ingredients most commonly found in our pantries: white all-purpose flour, granulated sugar, butter, eggs, milk, and baking powder.

You can swap up to half the flour for whole wheat or another favourite whole-grain flour. You can use brown sugar instead of white which makes a denser, moister bread. You can use margarine or butter for the oil and almond milk, buttermilk, or even water for the liquid.

Storing and Freezing

  • Banana bread will keep at room temperature for 3-5 days. Try to keep the bread in a sealed container or in plastic wrap to keep the bread fresh for longer.
  • To freeze banana bread, allow it to cool completely and then store in an airtight container for up to 3 months. Allow thawing to room temperature before serving.

Knife Test

To check if the bread is done, insert a clean knife into the centre of the bread. If the knife has remnants of batter attached to it, place the tray back in the oven and let it cook for a minute or two more. If the knife comes out clean, your bread is ready to eat.

Ingredients
  

  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1 cup Sugar
  • 2 Eggs large
  • 4 Bananas Ripe
  • 1/4 cup and 2 tbsp of Oil

Instructions
 

  • Place oil, eggs and sugar in a bowl and mix with a hand blender til smooth and creamy.
  • Add bananas to the mixture and blend evenly.
  • Add sifted dry ingredients to egg mixture and blend til evenly mixed.
  • Place mixture in a greased bread tin.
  • Bake at 180 degrees Celsius / 375 degrees Fahrenheit for 45 minutes.
  • Test with a clean butter knife by inserting knife into the middle of the bread. If it comes out clean it is ready. If it comes out sticky with batter, leave in for a little longer.
