Bacon and Mushroom Quiche

One of my favorite light meals which are quick and easy to make. This Bacon and Mushroom Quiche recipe is very versatile when it comes to fillings. In addition, my favorite part is that crisp flaky crust. Great for light meals with a salad, or on its own as a full meal. It is absolutely great for brunches. I promise that you will be creeping in for a second piece.

Quiche is a savory egg custard (egg, milk, and cheese mixture) baked in a flaky pie crust shell. Normally you can add different meat and vegetable filling to the custard to give it a different flavor. 

Make fillings from your favorite foods or from leftovers. Use a combination of cheese, meat, seafood, or poultry and vegetables. Great options are Mushroom and bacon as I have done in this recipe. Feta and Spinach, Leftover steak with mushrooms, shredded chicken with peppers, or even just roasted vegetables all give great flavor. The list goes on and on. I have personally tried a few unusual combinations with what I had leftover in the fridge. I have to say some were surprisingly delicious. This is my easiest quick recipe this Bacon and mushroom recipe.

How to tell if the quiche is done. 

Baked custards (egg, milk and cheese mixture) should be removed from the oven before the centre is completely set. When you shake the dish the centre should jiggle slightly. Once the quiche has been removed from the oven, the custard will continue to “cook” in the dish and the centre will firm up quickly. The Toothpick test: Insert a toothpick into the centre of the quiche. If the toothpick is clean when pulled out, the custard is done. Although If any custard clings to the toothpick, bake a few minutes longer and test again.

  • 1 quiche pastry ( see my quick quiche pastry recipe)
  • 250 grams Bacon chopped
  • 250 grams Mushrooms sliced
  • ½ cup Onion diced


  • 1 cup Cheese grated
  • 3 Eggs beaten
  • cups Milk
  • ½ tsp Salt
  • ½ tsp Black Pepper


  • Preheat oven to 180 degrees C or 375 degrees F.
  • Place bacon in a large skillet, and fry over medium-high heat until crisp. Drain on paper towels.
  • In the same pan fry onions and mushrooms over medium-heat until mushrooms are soft and tender and any water as evaporated. 
  • Remove pan from heat and add bacon. Mix together and set aside too cool. 
  • In a medium bowl, whisk together eggs, milk, salt and pepper. Add grated cheese and mix till combined. 
  • Place pastry into a greased oven proof dish and press down lightly. Add Mushroom bacon mixture on top of the pastry and spread evenly. 
  • Add custard mixture on top of the mushrooms and bacon and even out with the back of a spoon. 
  • Bake for 45 minutes in the preheated oven.
  • Allow quiche to sit for 10 minutes before cutting into wedges.
